Pumpkin Soup No. 221 Yields 6 Servings
6 cups chicken broth, or 1/4 tsp black pepper, freshly
2 cans consomme, and ground
2 1/2 cups water 1 tbls flour
2 lbs pumpkin, peeled and 1/4 cup water, cold
cut into 1" cubes 1 cup whole milk
1 1/4 cups onions, chopped
salt, to taste
Heat the broth in a large saucepan. Add the pumpkin, onions, salt and pepper.
Cook until the pumpkin is soft, about 20 minutes.
Puree in batches in a blender or food processor or force the soup through a
sieve.
Return to the pan. Put the flour in a cup and add the water stirring until
smooth. Add the flour mixture. Heat, stirring, until the soup comes to a
boil.
Add the milk and correct the seasonings before serving.
